Duke of Edinburgh courses can be arranged on demand and involve one class per month for 3-6 months, plus “homework” for the cooks to work in in between the classes.
The course is an ideal introduction to cookery skills to set-up young people with a repertoire of recipes to take away with them when they leave home. Cooks will have confidence to feed themselves and cook for others.
The list below details the menus cooked on a previous course, but I will work with the group during the first class to design a course which appeals to their taste-
Month One: Lasagne & chilli chips, two chocolate brownie
Month Two: Mushroom risotto, garlic bread, Victoria Sponge
Month Three: Caramalised onion tart, Salad with French dressing, crushed new potatoes with pesto, oat & raisin cookies
Month Four: Baked goats’ cheese salad, fruit crumble & custard, chocolate cookies
Month Five: Afternoon Tea- Homemade butternut squash hummus & rocket sandwiches, cheese & chive scones, ‘fancy’ cupcakes
Month Six: Dinner Party - Sushi & Thai dipping sauce, Thai curry with Basmati rice, orange ice-cream
